Rainbow grain salad

This was whipped up out of random bits we needed to use up but it is well worth remembering the recipe as I would love to recreate it again.
Ingredients

  • Quinoa (cooked in stock)
  • Cous cous (cooked in stock)
  • Red pepper
  • Courgette
  • Red onion
  • Carrot (all above tumbled in smoked paprika, turmeric, cumin, coriander, olive oil and roasted)
  • Red chicory
  • Artichoke hearts (from antipasta mix)
  • Sundried tomatoes (as above)
  • Nicoise olives (as above)
  • Coriander
  • Roast chicken breast
  • Sliced chorizo (from antipasti mix)
